These goey blondies are an absolute treat, they're even healthy enough for you to eat for breakfast!
Chickpeas are loaded with fibre and protein, making them a goto for improving microbiome health and satisfying nutritional requirements.
Almonds are also a great source of protein, fibre and healthy fats. Almonds are the perfect 'food is medicine' dietary addition, as they help to skew the microbiome composition beneficially, reducing dominance of some more harmful and inflammatory bacterial species and feeding up our beneficial species.

Ingredients
1 x can chickpeas
1 x egg
1/2 cup almond meal (can opt opt for oat flour instead)
1/2 cup brown rice flour
2 tbl yoghurt
1/2 tsp baking soda
1/3 cup maple syrup
1/3 cup peanut butter (can use sunflower seed butter @ceresorganics have a delicious one or use unhulled tahini)
1 x mashed banana
1 tsp vanilla essence
choc chips (I'll leave this up to you liking, I usually add approx 1/2 cup.
Method
- Add all of the ingredients to a blender (except chocolate) and blend
- Mix in choc chips
- Pour mixture into baking tin and bake at 180 degrees for 25 minutes.
- Make sure to wait until completely cooled before cutting into squares.
Alternatively, if you don't have a high powered blender
- Combine dry ingredients (stir with wooden spoon)
- Combine wet ingredients - use a bar mix or food processor
- Add dry ingredients to wet ingredients, mix using a wooden spoon.
- Pour mixture into baking tin and bake at 180 degrees for 25 minutes.
- Make sure to wait until completely cooled before cutting into squares.
