Try this easy to make, gut loving pumpkin risotto. Loaded with prebiotics and bone broth, your digestive system will love you for it.
Ingredients:
3 x Tbl Olive oil
1 x Onion (Diced)
3 x Garlic cloves (Finely chopped)
2 x Cups Arborio rice
1 x Kent Pumpkin (diced)
3 x tsp NutraOrganics Chicken Bone Broth
1/3 Cup White wine
4 x Cups water
1/2 Cup Nutritional Yeast
1 x Bunch Parsley
Salt and pepper (to your liking)
Method:
1. Heat Olive oil. Fry off onion until translucent.
2. Add garlic
3. Mix through arborio add rice
4. Pour in white wine (let simmer)
5. Dice pumpkin and add to the pot
6. Pour in Bone broth 3 x tsp mixed in 2 cups water, then add another 2 cups of water
7. Add parsley
8. Season with salt and pepper
9. Place the lid on and cook in the oven for 1 hour
