Microbiome Enhancing Pancakes

These pancakes are loaded with protein, fibre and resistant starch from green banana flour. Fibre and Resistant starch have been extensively studied for their beneficial impacts on the microbiome and enhancing butyrate production.

Sluggish bowels? Then I’ve also got you covered! Freshly ground flaxseeds are added to this recipe to keep you regular.

Ingredients
1 x Cup almond meal 

1 x cup ground flaxseeds

1/2 x cup Green banana flour 

1 x Tbl cinnamon 

4 x Eggs 

1/2 x cup Plain green yoghurt 

2 x Mashed bananas 

1 x cup milk (I used Bonsoy) - add more if required to reach desired consistency

Butter or Olive oil to fry

*** Whatever spread you desire - My kids opted for organic strawberry jam and raw honey. 

 

Method 

1. In a mixing bowl add - mashed banana, eggs, yoghurt and milk 

2. Blitz using a bar mix 

3. Add almond meal, ground flaxseeds, green banana four and cinnamon - blitz again

4. Heat butter or oil in the pan and dish out using a spoon. Flip when golden brown.

5. Add whatever spread you desire and Enjoy x
