Plum, White chocolate, Coconut delight cake

Aaaand the secret ingredient is??

Who knew that you could make such a delicious 'healthy' cake with a can of beans?

That's right, to load this beauty up with fibre and to feed the beneficial bacteria in the microbiome, I have included a can of beans in the mix, alongside other super healthy, nutrient dense ingredients. 

What's more, this recipe is so quick and easy - Add all the ingredient (minus the plum and white chocolate) to your blender or thermomix and it basically makes itself. 

Ingredients List:

  • 1/2 cup almond meal
  • 1/2 cup ground flaxseed
  • 1/2 cup brown rice flour
  • 4 X eggs
  • 1 tsp bicarbonate soda
  • 1 tsp vanilla essence
  • 1/3 cup maple syrup
  • 1 can coconut milk
  • 1 X can mixed beans
  • 4 X plums (diced)
  • 1/2 block white chocolate chopped into mall squares

Method:

  1. Add all in ingredients to a a blender or thermo mix (minus the chopped plum and white chocolate). 
  2. Once all ingredients have been been sufficiently blended, mix through the diced plum and chopped white chocolate with a spatula.
  3. Pour the entire mixture into a lined baking tin - cake or square.
  4. Bake at 180 degrees celsius for 40 minutes.
  5. Make sure to wait until the cake cools completely before cutting into squares.
