I've outdone myself this time. This is such a nutritionally dense, delicious, high protein snack idea that you and your family are guaranteed to LOVE!
Ingredients
1 x cup pepitas
1 x cup sunflower seeds
drizzle olive oil
drizzle maple syrup
2 x tbl peanut butter
2 x tbl tahini
1/2 cup coconut oil
1/3 cup maple syrup
1 x cup soy crisps
1 x block of good quality white chocolate - optional
Method
1. Line a baking tray and spread out pumpkin seeds and sunflower seeds
2. Drizzle with olive oil and maple syrup - stir through and bake for approx 5 minutes, until seeds are slightly browned
3. In a separate bowl mix together peanut butter, tahini, coconut oil and maple syrup.
4. Add Soy crips and seeds to a bowl - mix to combine and then pour over wet mixture. Ensure you mix so that the whole mixture is now a wet gooey consistency.
5. Line a square bake tin and press mix firmly down to the edges.
6. Optional - melt white chocolate and evenly pour across the top of the mixture.
7. Freeze for a couple of hours, then take out and portion out into squares.
*** Store in the freezer and take out as required.
